In the classy restaurant of the brand new One & Only Aesthesis, the multi-award winning chef Hector Botrini (the most influential chef in Greece, according to his colleagues) mixes his two origins in a menu that proposes Greek-Italian cuisine with comfort notes and refined details – like those that give a special style to the restaurant’s designer space, with its many booths, tables overlooking the stylish meandering pool and private corners, floating in a beautiful mosaic with large, unusual, brown and pink marble tiles.

The cuisine has intimacy written in its DNA, with delicate management as a guide, such as the Valley shrimp (with ripe mango, ginger and raspberry gastrique bisque), the beef tartare (with fresh truffle and lemony pecorino cream), or the Alonissos tuna (confit in tuna salad, with tomatoes, olives, fresh roe and tomato water).
